Yuca Frita con Mojo (Fried Casava with Mojo Dipping Sauce)


Yuca Frita (Cassava Fries)

1 pound                    Frozen peeled yuca
1 teaspoon                Salt
2 cups                      Peanut oil

Toasted Garlic and Orange Dipping Sauce

½ cup                       Extra Virgin olive oil
1 head                      Garlic, about 10 cloves, finely minced
¼ cup                       Onion, finely minced
3 tablespoons             Lime juice
3 tablespoons             Frozen orange juice concentrate
To taste                    White pepper
To taste                    Salt

1. In a medium saucepan bring yuca to boil in salted water. Cook approximately 1 hour or until tender.
2. Remove from water and place yucca pieces on sheet pan to cool.
3. When yuca is cool, cut into sticks of desired size for fries. Refrigerate overnight to cool and firm.
4. While yuca is cooking heat olive oil in sauté pan, add onions and garlic and cook over very low heat until cooked through and just starting to brown lightly. Remove from heat and allow to cool
5. Add lime juice and orange juice concentrate to onion and garlic mixture. Blend until smooth. Season to taste with white pepper and salt.
6. When ready to serve heat peanut oil to 350˚F. Fry yucca pieces until golden brown., Serve with warm or room temperature dipping sauce.

Makes about 30 to 40 yuca fries.
