Seafood Soup (Sopa de Mariscos)

Seafood Soup

INGREDIENTS:
2 cups             Reduced sodium chicken broth
3 packets        Trader Joe’s Reduced Sodium Concentrated Vegetable Stock or 1½ vegetable bouillon cubes
24 oz              Old Havana Foods Sofrito Authentic Cuban Cooking Sauce
¼ teaspoon     White pepper
16 ounces       Seafood blend (calamari rings, bay scallops, shrimp) or your favorite seafood in small chunks

DIRECTIONS:
1.  Combine chicken broth, vegetable stock packets (do not add water),Old Havana Foods Sofrito Authentic Cuban Cooking Sauce
and white pepper in a saucepan over medium-high heat. Bring to a simmer.
2.  Add seafood blend, return to a simmer. Reduce heat to medium and simmer 4 to 5 minutes until seafood is cooked through. Do not overcook or seafood will toughen.
Serves 6.
