Shrimp Ceviche (Zesty Shrimp Salad)

INGREDIENTS:
1 pound                Cooked shrimp (or scallops or calamari)
¼ cup                  Old Havana Foods Mojo Marinade
2 tablespoons        Tomato paste
1 tablespoon          Extra virgin olive oil
1 medium              Avocado
To taste               Salt
1 teaspoon            Hot pepper sauce (optional)
2 tablespoons        Chopped fresh cilantro (optional)

DIRECTIONS:
1. Cut shrimp or seafood into bite size pieces, place in medium bowl. Add Old Havana Foods Mojo Marinade, tomato paste and olive oil. Stir to combine. Refrigerate up to 4 hours.
2. Before serving chop avocado into ½” dice. Add to seafood mixture, combine gently. Season with salt and pepper, hot sauce and cilantro if desired.
Serves 4.
