Mojito Black Bean and Quinoa Salad

½ cup                Quinoa
1 cup                 Water
½ teaspoon        Salt
¼ cup                Olive oil (more to taste)
¼ cup                Old Havana Mojo Marinade (more to taste)
2 teaspoons        Honey
¼ cup                Chopped fresh cilantro
¼ cup                Chopped fresh mint
¼ cup                Minced scallions
1-15 oz can        Old Havana black beans, drained
1 cup                 Diced grape tomatoes
½ cup                Diced red bell pepper
2 tablespoons      Minced fresh jalapeños (add more to make spicy)
To taste             Salt and pepper

1. In a small saucepan bring quinoa, water and salt to a low simmer. Cook 15 minutes or until tender and water is absorbed. Allow to cool slightly.

2. In a large bowl, combine the oil, Old Havana Foods Mojo Mariande, honey. cilantro, mint and scallions. Whisk to combine.

3. Add the beans, tomatoes, bell peppers and jalapeños. Toss well to coat with dressing. Add the cooled quinoa, toss to combine. Season to taste with salt and pepper.

4. Serve cold or at room temperature.             

Serves 4 to 6.
