Maduros con Tocino - (Bacon Wrapped Sweet Plantains)

1 whole       Ripe plantain, fully blackened skin, peeled and cut into ¾" thick round slices, same width as bacon
3 slices       Raw bacon cut into thirds

1.    Roll up plantain slices with bacon, secure with toothpicks.

2.    Bake at 350 F for 25 to 30 minutes until bacon is crispy and plantain is fully cooked.
