Cuban American Burger (El Cubanito)

1 pound                  Ground pork
1 pound                  Ground beef
8 tablespoons          Old Havana Foods Sofrito Authentic Cuban Cooking Sauce
1 teaspoon              Pepper
6 slices                  Swiss cheese (optional)
6                           Hamburger buns or torpedo rolls
3/4 cup                  Raisin Sofrito Ketchup (recipe follows)
6 slices                  Tomato
6                           Lettuce leaves
6 slices                   Red onion
1/2 cup                  Creamy Lime Spread (recipe follows)

1.  Pre-heat the grill.
2.  In a medium bowl combine the pork, beef, Old Havana Foods Sofrito Authentic Cuban Cooking Sauce and pepper. Lightly mix together until well combined.
3.  Form meat mixture into 6 (1/3 pound) patties to match round or oval shape of rolls and set aside.
4.  Grill burgers over medium-high heat until cooked through to 160˚ F, about 5-6 minutes per side. If using cheese place slice on burger patties with cheese and allow to melt.
5.  Toast buns. Spread bottom bun surface with 2 tablespoons Raisin Sofrito Ketchup, top with tomato slice, then lettuce leaf, burger patty and onion slice. Spread 1 tablespoon lime spread on top bun surface. Close burger.
6.  Have plenty of napkins ready to catch the delicious juices. Enjoy!

Raisin Sofrito Ketchup
½ cup               Old Havana Foods Sofrito Authentic Cuban Cooking Sauce  
½ cup               Ketchup
½ cup               Hot water
1 cup                Raisins, finely chopped
1. Place ingredients in blender or food processor and blend until smooth.

Creamy Lime Spread
½ cup                Sour cream (or mayonnaise)
1 lime                Juice and zest of 1 lime
1 tablespoon       Extra virgin olive oil
2 cloves             Garlic, crushed and mashed to a paste   
                        Salt, Pepper  
1. Combine the sour cream (or mayonnaise), lime juice, zest, olive oil and garlic in small bowl. Season to taste with salt and pepper.
