Black Bean Soup (Sopa de Frijoles Negros)

Black Bean Soup

INGREDIENTS:
16 oz               Old Havana Foods All Natural Sautéed Seasoning (Sofrito)
2  15oz cans     Old Havana Foods Black Beans (do not drain)

Optional Garnishes:
Sour cream
Diced red peppers
Diced onions
Chopped cilantro
Extra-virgin olive oil

DIRECTIONS:
1.  For a creamy soup combine contents of Old Havana Foods All-Purpose Sautéed Seasoning (Sofrito) with the entire contents of two cans of Old Havana Foods Black Beans (do not drain) in blender or food processor. Process until smooth. Place in saucepan. For a chunky soup combine all ingredients in saucepan but do not blend.
2.  Cover and simmer over medium low heat for 5 minutes or until heated through, stirring occasionally. Ladle soup into serving bowls. Garnish with sour cream, minced red peppers, onions, chopped cilantro and a drizzle of extra-virgin olive oil.

Serves 4.

Alternate Serving Style:
For a chunky soup do not puree mixture in Step 1. Continue as in Step 2.
