Black Bean and Corn Salsa

INGREDIENTS:
15 oz can              Old Havana Foods© Black Beans, drained, NOT rinsed
8 oz                      Corn kernels, thawed (do not use canned corn)
1/2 cup                 Red onion, finely diced
1 small                  Jalapeno pepper, minced (remove seeds before chopping for less spicy salsa)
3 tablespoons         Cilantro, chopped
2 tablespoons         Lime juice
1 tablespoon          Red wine vinegar
2 cloves                Garlic, minced
1/4 cup                 Extra virgin olive oil
1/2 teaspoon         Pepper
1/2 teaspoon         Salt

DIRECTIONS:
1. Drain Old Havana Foods Black Beans, place in medium size bowl.
2. Add corn, red onion, jalapeno and cilantro and mix thoroughly.
3. In a separate small bowl whisk together lime juice, vinegar, minced garlic, olive oil, pepper and salt to taste. Pour over corn and bean mixture and toss until well coated.
4. Serve with Easy Shredded Chicken or as a dip with tortilla chips.
Serves 4 to 6.
