Black Bean and Corn Salsa

INGREDIENTS (Serves 8):
2 (16 oz) cans Old Havana Foods© Black Beans, drained, NOT rinsed
1 (16 oz) bag frozen corn kernels, thawed (do not use canned corn)
1 small red onion, finely diced (about ¾ cup)
1 jalapeno pepper, finely chopped (remove seeds before chopping for less spicy salsa)
3 tablespoons cilantro, chopped
2 tablespoons lime juice
1 tablespoon red wine vinegar
2 cloves garlic, finely minced
¼ cup extra virgin olive oil
½ teaspoon pepper
½ teaspoon salt

DIRECTIONS:
1. Drain Old Havana Foods black beans, place in medium size bowl.
2. Add corn, red onion, jalapeno and cilantro and mix thoroughly.
3. In a separate small bowl whisk together lime juice, vinegar, minced garlic, olive oil, pepper and salt to taste. Pour over corn and bean mixture and toss until well coated.
4. Serve with Easy Rotisserie Chicken Tacos or as a dip with tortilla chips.
